One Pot Tomato Bath- My go-to comfort meal!
Whenever I am not in the mood to prepare an elaborate meal, whether for lunch or dinner, one pot tomato bath comes to my rescue. It is one of those simple dishes that feels wholesome and satisfying without the need for too much time and effort. All it needs is a little chopping, mixing, and letting the pressure cooker do everything for you.
You just have to prep everything and throw it into a pressure cooker; cook for 2 whistles and voila!!! An easy-peasy one pot tomato bath is ready in less than 45 minutes! What I love most about this dish is its versatility! On days for a light meal, I just pair it with onion raita, and if I want to add protein to my meal, I will pair it with a simple fried egg. This kind of gives you the most satisfying and indulgent meal.
This was one of the initial dishes I prepared for my partner, he loved it so much and asked me why I hadn’t shared the recipe before marriage 😀 Ever since one pot tomato bath has become our go-to dish, no matter how often I make it per week 😀
Ok, enough of the story, let’s get into the ingredients required and the procedure to prepare one pot tomato bath.
Ingredients for One-Pot Tomato Bath
- Rice-4 glasses ( you can check the measurement glass I used here)
- Cloves-7
- Cardamom-2
- Cinnamon- 1 inch
- Bay Leaf-1
- Star Anise- 1
- Onions-2 thinly sliced
- Green Chillies- 5 slit
- Ginger-Garlic Paste- 1 teaspoon
- Tomatoes-5 finely chopped
- Coriander Powder- 1 Teaspoon
- Garam Masala- 1 Teaspoon
- Red Chilly Powder- 1 teaspoon (adjust according to your spice levels)
- Pudina/Mint Leaves- 1 small cup
- Water- 8 glasses if using an electric rice cooker and 6.5 glasses if using a pressure cooker
- Oil- 4 Teaspoons
Procedure
- Wash rice thoroughly, drain and keep it aside.
- Heat oil in a pressure cooker and add cloves, cardamom, cinnamon, star anise, bay leaf and fry for a minute.
- Then add finely sliced onions, slit green chillies, ginger-garlic paste, 1 spoon salt and fry until onions turn translucent and the raw smell is gone.
- Once the raw smell is gone, add finely chopped tomatoes, coriander powder, garam masala, red chilly powder, salt, mix well and cook until oil oozes out.
- Once oil oozes out, add pudina, mix and fry for 2 minutes.
- Now add washed, drained rice and fry for 2 minutes until toasted well. This enhances the flavour of one pot tomato bath
- Now add water, check for salt and adjust according to your taste, cover and cook for 1 whistle.
- After 1 whistle, switch off the stove and allow the steam to release itself.
- Once steam is released, wait for 10minutes and then open the lid, mix well.
- Your yummazing, flavourful One Pot Tomato Bath is ready
Serve one pot tomato bath hot with a fried egg and raita on the side.

Note: If using basmati rice, wash it thoroughly, soak it for some time until the tomatoes are cooked, then drain and keep it aside. Also, add just 6 glasses of water.
The Rice: Water ratio is 1:1½
