Potato French Beans Curry- A comforting one-pot curry!
Imagine yourself on a chilly evening, relaxing on a sofa, wrapped in a cosy blanket, your favourite show playing on the TV, and just then your partner/loved one brings you hot rice with yummy, aromatic, tempting, drool-worthy hot Potato French Beans Curry. Wow, that’s heaven, right?
I know! This is exactly how I felt while making this potato-french bean curry in this cosy chilly weather. You can make this in one pot with just the ingredients that are sitting in your kitchen pantry. Just switch on your rice cooker (if you have one) and let it do its job while you start prepping for Potato French Beans Curry.
For this dish, I already had pre-cut French Beans in the fridge, so I quickly prepped other ingredients while the pressure cooker was heating up. As I already mentioned, this is a one-pot curry; the gravy consistency can be adjusted according to your preferences.
Ingredients for Potato French Beans Curry
- Potatoes- 3 Medium
- Cut French-Beans- 1 cup
- Onions- 2 medium
- Green Chillies -2 slit
- Tomatoes- 3 Medium
- Ginger- 2-inch piece
- Garlic Cloves- 9
- Cashews- 10
- Shahi jeera- 1/2 teaspoon
- Cloves -3
- Cardamom-1
- Black Cardamom-1
- Cinnamon- 1 inch
- Fennel- 1/4 tesaspoon
- Biryani Flower- 1 small piece
- Coriander Powder- 1 teaspoon
- Garam Masala- 1 Teaspoon
- Chilly Powder- 1 teaspoon
- Turmeric- 1 teaspoon
- Coriander leaves, finely chopped
- Kasuri Methi-1 teaspoon
- Salt as required
- Oil- teaspoons (adjust according to your preference)
Cosy, comforting one-pot curry that lifts your mood
Procedure
- Firstly, finely chop onions and dice potatoes and keep aside.
- Now, take a mixer jar, add tomatoes, ginger, garlic, cashews and make it into a fine paste. First, blitz the cashews and then add the rest of the ingredients.
- Heat oil in the pressure cooker and add Shahi jeera, Cloves, Cardamom, Black Cardamom, Cinnamon, Fennel, and Biryani Flower and fry for 2 minutes.
- Then add onions, green chillies, turmeric, salt and fry until golden brown.
- Now, add ground paste, coriander powder, chilly powder, garam masala, mix well and cook until oil oozes out.
- Once cooked well, add potatoes, beans and mix well and then add water
- Bring it to a boil on low flame and check for seasoning and adjust.
- Close the pressure cooker lid and cook for 3 whistles.
- Allow the steam to release and then open the lid. If it’s too thin, boil for some more time until you get the desired consistency.
- Finish it off with chopped coriander leaves and kauri methi and serve hot with rice or roti. I served this with coconut rice.
