In this post, I’m going to share the second recipe, Chicken Fry With Lollipop Base which I mentioned in the previous post that I prepared Three Recipes with 1.2 KG Chicken.

One of those is Butter Chicken/Easy Butter Chicken

In general, the Chicken lollipops are made with the drumsticks or the wing/thigh part of the chicken dipped in cornflour batter with spices (Chilly powder, turmeric, salt, etc.) and deep fried.

These are served as it is with mint chutney as Indian version or tossed in a sauce which will be so juicy yum…. as an Indo-Chinese Version.

Here I’m not using any drumsticks or bony pieces in this recipe. This is just made with cubed breast pieces which are just shallow fried and tossed in the sauce.

You must be thinking that “No Deep frying!!! but lollipop base, HOW? ” To know this let’s jump into the recipe.

Ingredients

For Marination

  • Boneless Chicken-300 grams
  • Red Chilly Powder-1 Teaspoon
  • Turmeric Powder-1 Teaspoon
  • Ginger Garlic Paste-1/2 Teaspoon
  • Salt-1 Teaspoon

For Pre-Frying

  • Marinated Chicken
  • Oil-1 Teaspoon

For the Lollipop Base

  • Onions-1 Medium Sized
  • Curry Leaves -1 Sprig(Optional)
  • Red Chilly Powder-1 Teaspoon
  • Coriander Powder-1 Teaspoon
  • Corn Flour-1 Teaspoon
  • Soya Sauce-1 Teaspoon
  • Tomato Sauce-1 Teaspoon
  • Salt -1/2 Teaspoon or As required
  • Pepper Powder or Crushed pepper-1/2 Teaspoon (Optional)

Procedure for Chicken Fry

  1. Firstly marinate the chicken with all the ingredients under “For Marination” overnight or for 2 hours in the refrigerator.
  2. Meanwhile, finely chop the onions and keep it aside.
  3. Now take a pan, heat the oil and fry the marinated chicken until golden brown.
  4. Once it turned golden brown, switch off the flame and keep it aside in a plate.
  5. In the same pan, heat a teaspoon oil, add in curry leaves, chopped onions and fry until translucent.
  6. Once onions turn translucent, add in red chilly powder, coriander powder and fry until raw smell goes off.
  7. Now take a small cup or bowl, add in the corn flour, soya sauce,1/2 Teaspoon salt, little water and mix well.
  8. Pour this mixture into the onion mixture and stir until it thickens.
  9. Once the soya mixture is thickened, add in the tomato sauce, fried chicken and mix well.
  10. Fry until well combined.
  11. Sprinkle with crushed pepper in the end if using.
  12. Garnish with coriander leaves and serve hot as a starter or snack.

Tips

-You can replace the tomato sauce with one teaspoon sugar.
