Curry Powder/Kura Kaaram/Andhra Curry Powder

Curry Powder also called Kura Kaaram in Telugu an Indian language where Kura means curry/fry and Kaaram means spice. It is a mixture of Indian spices, usually used in fried foods like Brinjal Fry ( Vankaaya Vepudu), Ladys Finger fry/Okra/Bendakaaya Vepudu, Beans Fry etc.

This adds a unique flavour and enhances the taste of the dish and can be stored for up to 1 Month. Sometimes I give a Karnataka flavour or colour to it with Byadagi Chilli, grown in Haveri District here. This is not a spicy chilli but gives you a vibrant red colour to any of your dishes

Now let’s get into the detailed step by step procedure of Curry Powder.

 Ingredients for Curry Powder/Kura Kaaram

  • Red Chilies/Endu Mirapakaayalu/Ona Menshinkai-15
  • Byadagi Chillies/Byadadagi Menshinkai(optional)-2 ( see below where to buy)
  • Coriander Seeds/Dhaniyaalu/Dhaniya-1 ½ Teaspoon
  • Cumin Seeds/Jeelakarra/Jeerige-1 Teaspoon
  • Fenugreek Seeds/Menthulu/Menthya-¼ Teaspoon
  • Garlic Cloves/Vellulli/Bellulli-5
  • Tamarind/Chinthapandu/Hunsehannu-2 inch piece
  • Poppy Seeds/Gasagasaalu/Gasagase-½ Teaspoon
  • Salt-As required

Procedure

  1. Heat a pan, add in red chillies and dry roast until crisp.
  2. Once the chillies turn crisp remove from heat, transfer to a plate and allow it to cool.
  3. Meanwhile, in the same pan, add coriander seeds, cumin seeds, garlic cloves, tamarind and fry until the raw smell goes off and turn aromatic.
  4. Switch off the flame, add poppy seeds and fry until it turns slightly brown in colour.
  5. Once turned brown, transfer the above mixture to the chillies plate and allow it to cool.
  6. Once the mixture is cooled, transfer to the mixer jar, add salt and grind it into a coarse powder.
  7. Allow to it cool and transfer to an airtight container/ jar preferably a glass jar and store up to a month
  8. Now curry powder is ready to add to any of your favourite Fry/Vepudu recipes.

If the chillies are a little moist, sundry them the previous day
